Barbara Jean’s Canna Cornbread

I grew up in the Midwest and in the Fall, leaves change, rock salt and snow shovels go on sale and kitchen windows are sweaty with condensation from home cooks, like my mom, Barbara Jean, making magic.

So, here I am, a serious home cook in my own right.  It was just a matter of time before I created a mash up between Barbara Jean and Mary Jane!

Cornbread was a staple in our home. It was always welcome and during holidays it became dressing! And, any cook worth their weight in pot liquor, owned a cast iron skillet.  It creates the best crust and every piece is an end piece! YES!!

To you my new friends, I offer Barbara Jean’s Canna Cornbread. I added the canna part! But, the rest is all Barbara Jean!

Using the Mota Pot, I infuse bacon fat using 4 grams of Blue Dream (approximately 19% THC) representing 760 mg available. After the extraction, 70% is infused into my bacon fat, giving me 532mg of THC into that half cup. At 66 mg per tablespoon, I used just two tablespoons equaling 133 mg. That divided by 10 servings gives you 13 mg per slice. Here’s the math: 4000mg (= 4 grams) x .19 = 760 mg, 760mg x .7 = 532mg

Don’t forget to save the wet plant matter (puck) after the extraction for another dish! Here there is 233 mg (30%) left to enjoy.  This just might find it’s way to a big pot of chili?!

Barbara Jean’s Canna Cornbread

10” cast iron skillet

1 Cup Yellow Cornmeal*

! Cup AP flour, unbleached

2 teaspoon baking powder

1 Tablespoons granulated white sugar

¼ teaspoon table salt

1 teaspoon baking soda

1 large egg`

2 Tablespoons infused bacon fat**

 

Directions

Preheat the oven to 400 degrees and put the dry cast iron skillet in to heat up.

Add all ingredients, except bacon fat, to a medium size bowl and mix until well incorporated.

Once your oven is preheated, remove the skillet and add the bacon fat to melt.  Return the skillet to the oven and watch closely.  You don’t want it to burn.

Once the bacon fat has melted, pull the skillet out and swirl the fat it all over the skillet, bottom and sides.

If you like, carefully snag one tablespoon of the hot bacon fat and add it right into your batter. Mix well. It all gets absorbed anyway if don’t want to.

Now, pour that batter into the hot skillet and listen for the sizzle.  You want that sizzle!

Place your cornbread back in the oven and bake for 25-30 minutes or until golden brown.   

Calculate Your Dose: This example uses a potency of 22% and extracting into  a  ½ cup of bacon fat.

The Mota Pot gives a 70% extraction rate into bacon fat.

1Gram = 220mg of THC Available per gram

3.5G x 220mg = 770mg total THC

770mg x .7 = 539mg extracted into ½ cup of  BUTTER/approximately 67.3mg per tablespoon

Remember, there are 231mg of THC left in the puck! You can still use that!
